GifCapture is an easy to install (if comfortable with the command line) and easy to use tool.
A window opens up, which you can then resize to capture whatever part of the screen you want to record. Then click record, do your thing, click stop and then you have an animated gif of what was just going on.
This is perfect for creating gifs demonstrating a workflow.
It's open source so you can inspect, use and remix it to meet your needs.
