I've come across Tutanota recently when looking to an email service to sign up for without a phone number. Tutanota was the only one I could find.
Maybe there are more, but the amount of tracking (phone number, ip addresses, etc.) that's going on online right now really scares me. It becomes close to impossible to use the internet anonymously. Some sites now even force you to sign up with Facebook and the likes, that's mad!
Anyway, I'm very happy that I've found Tutanota - not only can I use it anonymously, it's also encrypted and open source.

proton mail and tuta mail is basically the same for privacy. for being anonymous, you can try temporary/disposable email addresses, something like https://tempmail.so
I don't recommend it. I registered on some platforms using my email address and continued using it. When I tried to log in to my email address after a while, it deleted my account due to inactivity, and I couldn't log in or register using my email address again. I found this to be very dangerous, as I could lose accounts at any time because of this.
The email service is nearly perfect, even with the free plan features. However, the primary issue I frequently encounter is that some emails go unanswered. I spent months wondering why certain contacts were ignoring me before I realized that major providers like Google automatically route my messages to the recipients' spam folders. Google currently flags the tuta.io domain as untrustworthy. While this is not a direct fault of Tuta, it forced me to switch to ProtonMail. I hope this issue is resolved soon.
Best Email for me so far. Fast, simple, and free to try before you go all-in (if required). Post-Quantum Security has been part of the features since a while as well (something Proton only starts to offer since now) so tuta is my first option.
It's sad to see Tuta has such a low rating here at the moment. I have been using their service for over 2 years. I have two main email accounts, one with Tuta, and another with Proton.
In terms of privacy, Tuta is on par with Proton. The simple UI is something I like, although I think it could get optimized.
The account deletion feature should not be an issue; Tuta is not a throw-away email provider. For privacy reasons, it makes perfect sense for the email to be deleted if you don't use it for half a year.
Tuta still has a long way to go, but it's spot as one of the best email providers along with Proton can't be contested at this moment.

Unless you're going to use this as your main email that you regularly use, find something else, since accounts with no activity for 6 months get deleted, sadly I'm here writing this review because I found out the hard way and lost an account because of this.
So unless you're willing to lose everything for failing an "activity requirement", reconsider.
