This software is very handy ! No more need to redo your key again and again to install a single ISO in Legacy OR UEFI: Install Ventoy on the USB stick once and copy all the ISO's you want in it (Operating systems, diagnostic tools and so on...) The extra feature is that the software formats the USB Flash Drive for both UEFI and Legacy boot menus.
Ventoy has been discovered to be using fake root certificates to load untrusted kernel drivers in a package that includes a variety of virustotal positives. There isn't a legitimate reason to be writing malware-looking, malware-behaving software, so that's what it is.
It's not Ventoy, but iVentoy (the open source part in the PXE repository), and the developer has explained why he's using an unsigned kernel drive. He's also released a new version later that removed the signed httpdisk driver file and doesn't load the CA anymore.
Do you find it compelling that he uses malware obfuscation techniques and malware loading techniques to bypass security controls to inject undisclosed code and his explanation is that the software is also written by him but the name is 1 letter different so it doesn't count? Like what is a red flag for you if that isn't making the cut

As a tool, its great. It's reliable and does what it is supposed to do.
However, it is not fully open source as it contains a growing number of pre-compiled BLOBs, more then 100 at this point in time. Given the high sensitivity of an OS install, I cannot recommend using it, especially in a professional environment.
It's so convenient to not have to reformat your USB for every use. You can keep multiple programs on the same drive or simply cut/copy/paste them on & off as needed. In the initial setup you can also chose the partition space you want and leave the rest to reformat however you want and continue using as a separate partition. So, it's nice to also be able to set that as the storage for your log files, etc. as your using the .iso program; e.g. if you're using recovery software, etc.

Frankly, to this date it's a nobrainer. There's no competitor, and the only case where you want to use another bootable USB creator is if you meet compatibility issue.
Ventoy is a tool that lets you create a USB flash drive that can boot multiple ISO images. You just need to install Ventoy on the USB stick once, and then you can copy any ISO files to the same stick.
