YT-DLG is a GUI's front-end and currently uses YT-DLP's CLI as Back-end.
Custom CLI Back-end commands are supported on the options menu.
Subtitles from the youtube's video are an option to be downloaded as well and these can be included into the MP4 container (not recommended to do this on MP4s).
Video formats are limited to what YT supports plus some, I'd say "tricks" to download higher resolution videos.
Not all resolutions across SD up to UHD aren't listed (maybe due to how some videos were uploaded by their respective channel)
