I like macOS as an alternative to ZealOS because of its integration with the Mac hardware and thus taking advantage of the hardware security and macOS being very secure (full verified boot, Lockdown Mode, option to install apps only from the Mac App Store, sandboxing for App Store apps etc.) And you can just not use iCloud by signing in with Apple ID in the App Store not System Settings, and you can enable Advanced Data Protection if you use iCloud.
